If you remain in any doubt about whether theft may be diminishing your hard earned profits at you bar check consider this: Bartenders write books that show you how to scam from your employer! Clearly the level of dishonestly that being displayed here is unusual but the combination of alcohol, cash and customers that are actively encouraging your bartenders to 'top that one up a little more' is a dangerous combination.
